Vegan pizza…sorry still hasn’t gotten old. Put a cashew ricotta cheese on bottom for the win!

Momma and Dada go vegan!
Well, we finally bit the bullet and went Vegan and it has been much easier and more rewarding than i could have imagined. I am cooking up a storm this rainy season and creating all sorts of dishes that once were loaded with cream and cheese and are now just full of protein and goodness. I’ll be taking pics along the way b/c this is absolutely fascinating me. Below i made an alfredo sauce from raw cashews that tasted just like alfredo sauce. Under that i made a spanish omlette using chickpea flour and below that is vegan ricotta cheese from raw cashews as well. Not pictured are the vegan cheesecakes i made (which are totally healthy), the killer vegan banana cream pie and lastly the vegan pizza with grilled zucchini and ricotta. This is seriously so cool! At the moment I am making Dada’s famous vodka sauce omitting all the cheese and cream and replacing with a cashew cream. Let’s see if i can trick the girls :).

Well out of no where on Thursday the little runt below decided she was heading back to school! I quickly whipped up a lunch for her and she strutted her tiny little hiney right into Puedo without looking back. This time i wasn’t going to make the same mistake so i picked her up at 12:30 (2 hours earlier) and she was happy as a clam! Hopefully we’ll be doing the same on monday and she will have a blast again, but we’ll see what monday brings :). The other little runt can’t stay long enough. She is loving school and i am loving hearing all her stories and watching her excitement.
